https://so08.tci-thaijo.org/index.php/KRIS/article/view/6910

This research aimed to: (1) compare three bio calcium extraction methods from mackerel fish bones namely boiling, steaming, and pressure cooking; and (2) determine the optimal bio calcium content (0%, 1%, 3%, 5%, and 7% of total ingredients) in crispy snack sheet products made from rice flour blended with sago flour. The physical quality (L*, a*, b* color values, expansion ratio, and density) and sensory acceptance were evaluated by 30 untrained panelists. The results showed that boiling and pressure cooking method yielded the highest bio calcium powder production rates of 8.39±0.82 and 8.40±0.61, respectively, significantly higher than that of the steaming method (4.65±0.32) while the color values of bio calcium powder showed no significant difference among the 3 extraction methods. For snack products, lightness (L*) and density decreased significantly with increasing bio calcium powder content (p≤0.05), whereas expansion ratio showed no significant difference across all formulations (p≥0.05). The sensory evaluation revealed that 3% bio calcium powder supplementation achieved the highest scores for taste (8.17±0.87) and overall acceptability (8.33±0.66), significantly higher than the 5% and 7% levels (p≤0.05). These findings suggest that the developed crispy snack sheets have potential as an alternative health-oriented snack for elderly populations and individuals at risk of calcium deficiency.
Surayani Baraheng

This study aimed to 1) develop Miang Kham using crispy baked young toddy palm by substituting crispy baked young toddy palm for roasted coconut and maltitol syrup as a replacement for palm sugar, and 2) enhance the value of locally available raw materials through the development of a functional food product with reduced sugar content. The study consisted of two phases: (1) substitution of roasted coconut with crispy baked young toddy palm at the amount of 0, 25, 50, 75, and 100%, and (2) substitution of palm sugar with maltitol syrup at the amount of 0, 25, 50, and 75%. The evaluation was conducted on the sensory, physical, chemical, and microbiological qualities of the products. The results showed that replacing roasted coconut with crispy baked young toddy palm significantly affected sensory attributes (p < 0.05). The formulation containing 50% crispy baked young toddy palm received the highest overall acceptability score (8.00) and was selected as the base formulation for further product development. Increasing the level of maltitol syrup as a substitute for palm sugar significantly affected the physical and chemical properties of the product (p < 0.05). It was found that lightness (L*), yellowness (b*), and hardness decreased while water activity and moisture content increased. However, replacing palm sugar with maltitol syrup at the amount of 0–75% did not significantly affect consumer sensory acceptance (p ≥ 0.05). The formulation containing 50% maltitol syrup achieved the highest overall acceptability score, and all formulations met food safety standards for microbiological quality. In conclusion. The formulation containing 50% crispy baked young toddy palm as a substitute for roasted coconut and 50% maltitol syrup as a substitute for palm sugar was the most suitable for producing crispy toddy palm Miang Kham. This formulation successfully reduced sugar content while maintaining desirable product quality and consumer acceptance.
premraphi ooaymaweerahirunNomjit Suteebut

2026-06-262026-06-2661104114Research Competencies of Vocational Education Teachers in AI Era
https://so08.tci-thaijo.org/index.php/KRIS/article/view/7050

This academic article proposes a research competency framework for vocational education teachers in an artificial intelligence world and provides an example in the redesign of an existing study to align with research competency needs. Synthesis revealed six competency domains, i.e., 1) research knowledge and design competency, 2) information retrieval and knowledge synthesis competency, 3) data collection, data analysis and AI-assisted research competency, 4) innovation and research utilization competency, 5) research publication competency, and 6) research attributes and ethics in the AI era. To illustrate the application of this framework, a manuscript originally developed in 2017 was submitted to ChatGPT for

revision to align with contemporary research practices and the six competency domains. The results revealed several recommendations for modernization. The recommendations which emerged from this stage were adopting a mixed-methods research design, using analytical academic literature search and analysis tools such as Semantic Scholar, including learning analytics that probe for frequent participation to perform project-based learning behaviours, and conducting thematic analysis of reflective journals or interview data. Moreover, the results suggested extending the research outcomes into a Statistical Literacy Development Framework for TVET students. The results also highlighted that researchers in the age of AI are ultimately responsible for the validity of data, analyses, interpretations, and conclusions generated with artificial intelligence assistance.
Afifi Lateh
