Model for Developing Vocational Education Manpower to Enhance the Students’ Competences in the Field of Food and Nutrition on Halal Food of Pattani Vocational College

Abstract

This research aimed to: 1) examine the current situation in producing and developing vocational manpower to enhance students’ competencies in the Food and Nutrition program focusing on the Halal Food tradition at Pattani Vocational College, 2) develop a model for producing and developing vocational manpower to enhance students’ competencies in this area, 3) implement the developed model on students at Pattani Vocational College, and 4) evaluate the outcomes of the model implementation. A mixed-methods research design was employed. Data were collected using questionnaires administered on administrators, teachers, educational personnel, students in the Food and Nutrition program, community representatives, and local entrepreneurs. The data were analyzed through percentage, mean, standard deviation, and content analysis.

The research findings revealed that 1) the current situation of vocational manpower production and development in this context was at a low level. 2) The developed model was overall found to be highly appropriate and consistent. 3)The participants showed high levels of knowledge, understanding, and satisfaction. Finally, 4) 100% of the 2024 graduates passed both the National Skill Standard Test for Thai Cooks (Level 1) and the Professional Qualification Test for Halal Cooks (Level 4) certified by the Thailand Professional Qualification Institute (public organization). The implementation of the model resulted in improved student learning outcomes, professional qualification achievements, and readiness for the labor market. Moreover, the institution now has a practical model for developing vocational manpower in Halal food practices within the Food and Nutrition program.
