GUIDELINES FOR DEVELOPING A GREEN ECONOMY BY PROCESSING MAKRUT LIME INTO INNOVATIVE PRODUCTS FOR THE SUSTAINABILITY OF THE MAKRUT LIME PROCESSING COMMUNITY ENTERPRISE IN NAKHON NAYOK PROVINCE

This mixed-methods research aimed to 1) study the basic information and management processes of community enterprises processing star fruit in Nakhon Nayok province, 2) analyze environmental factors in the development and processing of star fruit products, and 3) test the causal influence of factors on the development of a green economy through star fruit processing into innovative sustainable products. Quantitative data were collected from 20 community enterprise leaders through in-depth interviews, and from 200 community enterprise members using questionnaires. Data was analyzed using content analysis, descriptive statistics, and multiple regression.
The research found that star fruit is a native plant with potential for green economy development. However, community enterprises lack capital, modern technology, and efficient management systems. Hypothesis testing revealed that perceptions of the green economy, community participation, and innovation capability significantly influenced the development of innovative star fruit products (p < 0.05), whereas perceived product value did not. Therefore, this research contributes to the development of a green innovation framework that can be extended to the green economy for community enterprises and reflects the need for government agencies to support technology, capital, and knowledge to enhance the competitiveness and sustainability of local products in the green economy system.
